Sushi Cucumber Cups
Fancy, delicious, and cheap all in one amazing, low carb package!
Ingredients
- 2 cucumbers
- 8 ounces cream cheese softened
- 2 tbsp chives + 2 tbsp for garnish
- 2-3 tbsp soy sauce
- 1 tsp Onion powder
- 3 ounces smoked salmon, cut into small slices
Directions
If you want to be fancy, take a vegetable peeler and create stripes down the sides of your cucumber. Cut your cucumbers into 3/4 inch slices. With a melon baller, remove enough of the inside to create a little cup. In a bowl, put your cream cheese, 2 tbsp of chives, your soy sauce, and onion powder and whip with an electric mixer. Once combined, spoon mixture into your cups. Top each piece with a slice of salmon, then sprinkle with chives.
